This yummy loaf comes from a book called: Végane mais pas plate! (Vegan but not boring) and is another regular meal for our family. I hope it will become one for yours too!

Ingredients:
1 cup quick oats
1/2 cup sunflower seeds
1 small onion, diced
1/2 red pepper, diced
2 cloves garlic
1 can of chickpeas, rinsed
1 Tbsp paprika
2 Tbsp Oregano
1 Tbsps steak spice (See below)
1 Tsp Worchestershire Sauce (See below), Salt and pepper

(For things I dont have at home, like worchestershire sauce I google how to substitute it and add what I can, always works out well)

Sauce:
3 Tbsp Tomato paste
3 Tbsp maple syrop
2 Tbsp Apple cider vinegar
1 Tbsp Tamari (soy sauce)
1 Tsp smoked Paprika

Preheat Oven to 375F
Mix sauce ingredients and set aside
Add Oats and seeds to food processor and mix a little.
Add onion, pepper and garlic and mix well
Add everything else and mix until it is almost a purée
Line a bread pan with parchment paper and empty contents of food processor
Cover with sauce
Bake for 50-60 minutes

We like to have it with roasted vegetables. After the loaf is in the oven I have time to leisurely cut up a choice of beets, carrots, cauliflower, sweet potato, brussel sprouts etc. coat with oil salt and pepper and put them in the oven, it is usually all ready around the same time.
